Sweet Potato Pie

Sweet Potato Pie

1 1/2 pounds sweet potatoes
1/3 cup milk
1 can sweetened condensed milk
3 Tbs brown sugar
2/4 tsp ground cinnamon
1/2 tsp vanilla
1/4 tsp salt
2 eggs
Refrigerated pie dough
Cooking spray
4 oz cream cheese

  1. Preheat oven to 350 degrees.
  2. Bake potatoes, wrapped in foil, for 1 1/2 hours.  Let stand for 10 minutes.  Remove foil and peeling and mash flesh.  Stir in milk, 1/4 cup sweetened condensed milk, sugar, 1/2 tsp cinnamon, vanilla and salt.  Add eggs.
  3. Coat  9 1/2 " pie plate with cooking spray, place dough in and finish the edges as desired.  Carefully add filling.  Bake at 350 for 45 minutes or until the center is set.  (It's consistency is very similar to pumpkin pie.)
  4. Place the remaining 1/4 tsp cinnamon and cream cheese in a mixing bowl and beat until combined.  Add 1/2 cup sweetened condensed milk and blend well.  Pour cream evenly over pie and let stand for 10 minutes.  Cut into wedges and serve.
